Vanilla Bean Almond Creamer
Almond milk reduced down with dates and whole vanilla beans into a thick, pourable coffee creamer.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Almond Milk Edition
Ingredients
- 2 cups Unsweetened Almond Milk
- 3 Medjool Dates, pitted
- 1 Vanilla Bean, split and scraped
- Pinch of Salt
Method
- Combine the almond milk, dates, vanilla bean pod and scrapings, and salt in a saucepan.
- Bring to a gentle simmer over medium heat, then reduce to low.
- Simmer 20 to 25 minutes, stirring occasionally, until reduced by about a third.
- Remove the vanilla pod and blend the mixture until completely smooth, dates and all.
- Cool, then bottle and refrigerate. Shake well before each use.
Kitchen note
The dates are doing double duty as both sweetener and thickener — blending them fully into the reduced milk is what gives this creamer body that almond milk alone could never achieve.
