A vanilla agar-set soy dessert served in glasses, with a softer panna-cotta-inspired presentation and a distinctly agar-based texture.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Soy Milk Edition
Ingredients
- 2 1/2 cups plain unsweetened soy milk
- 1/2 cup sugar
- 2 g agar-agar powder, approximately 1 level tsp; check package strength
- 1 tsp vanilla extract
- 1 cup fresh berries, for serving
Method
- Whisk cold soy milk, sugar and agar powder in a roomy saucepan.
- Heat while stirring. Bring to a gentle controlled boil and cook for about 2 minutes, or the agar supplier’s activation time, stirring across the base.
- Remove from heat and stir in vanilla. Divide among six small heatproof glasses.
- Cool promptly, cover and refrigerate for at least 3 hours. Top with berries at serving.
Cook with confidence
Before you start
What to expect
A softly set soy dessert using agar powder rather than gelatin.
Before you begin
Weigh the agar if possible and check its package directions.
The important cue
Agar needs a brief boil to activate; watch the milk closely during that step.
At the table
Set in glasses for the most forgiving soft texture.
