By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Soy Milk Edition
Ingredients
- 4 cups plain unsweetened soy milk
- 1 cup sugar
- Pinch of salt
Method
- Combine soy milk, sugar and salt in a broad heavy saucepan. Warm gently, stirring until sugar dissolves.
- Simmer uncovered over low heat for 60 to 90 minutes, stirring frequently and more often as it thickens.
- Check volume carefully in a heatproof jug. Stop when about 2 cups remain; the mixture thickens further when cold.
- Cool promptly in a shallow container, cover and refrigerate. Use within 5 days or freeze portions for 1 month.
