Traditional Arroz con Leche
A classic rice pudding where the rice grains are slow-cooked in sweet rice milk and cinnamon.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Rice Milk Edition
Ingredients
- 1/2 cup White Rice
- 3 cups Rice Milk
- 1 cup Water
- 1 Cinnamon Stick
- 1/3 cup Sugar
- Pinch of Salt
- 1 tsp Vanilla Extract
- Ground Cinnamon, to finish
Method
- Combine the rice, rice milk, water, cinnamon stick, sugar, and salt in a heavy pot.
- Bring to a gentle simmer over medium heat, then reduce to low.
- Cook, stirring often, for 30 to 35 minutes, until the rice is tender and the mixture has thickened.
- Remove the cinnamon stick and stir in the vanilla.
- Serve warm or chilled, dusted with ground cinnamon.
Kitchen note
Rice milk's heat stability means you can cook this at a slightly firmer simmer than a dairy version without any risk of curdling, just stir often, since the rice itself, not the milk, is what can stick and scorch.
