Maple Caramel Drizzle
Rice milk and pure maple syrup simmered until reduced into a thick, sticky dessert sauce.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Rice Milk Edition
Ingredients
- 1 1/2 cups Rice Milk
- 3/4 cup Pure Maple Syrup
- 2 tbsp Butter
- Pinch of Salt
Method
- Combine the rice milk, maple syrup, and butter in a heavy saucepan over medium heat.
- Bring to a gentle simmer, then reduce heat to low.
- Simmer, stirring occasionally, for 25 to 30 minutes, until reduced by about half and slightly thickened.
- Stir in the salt.
- Cool slightly before serving warm, or cool completely and refrigerate.
Kitchen note
This will thicken through reduction and concentration, not through any natural body in the rice milk itself, don't expect it to set up as firm as a dairy caramel once cooled, since rice milk brings none of the fat that provides that structure.
