Rice milk brushed onto fruit pie lattices to create a perfectly browned bakery crust.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Rice Milk Edition
Ingredients
- 1 unbaked Pie Crust, lattice or full top
- 2 tbsp Rice Milk
- 1 tbsp Coarse Sugar, for sprinkling
Method
- Assemble your pie with its lattice or full top crust as usual.
- Brush the entire top crust generously with rice milk using a pastry brush.
- Sprinkle evenly with coarse sugar.
- Bake according to your pie recipe's instructions.
- The crust will emerge from the oven with a deep, glossy, bakery-style golden-brown finish.
Kitchen note
This is the single easiest way to use rice milk in this entire book, its natural sugar makes it a genuinely superior substitute for an egg wash when you want color without the sheen of egg whites.
