By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Rice Milk Edition
Ingredients
- 1/2 cup White Quinoa, rinsed
- 1 cup Rice Milk
- 1/2 cup Water
- 2 tbsp Maple Syrup
- 1/2 tsp Vanilla Extract
- 1 cup Fresh Blackberries and Raspberries
Method
- Combine the quinoa, rice milk, and water in a saucepan.
- Bring to a gentle simmer, cover, and cook 15 to 18 minutes until the liquid is absorbed and the quinoa is tender.
- Stir in the maple syrup and vanilla, then let cool slightly.
- Layer the sweetened quinoa and fresh berries in glasses, alternating layers.
- Serve warm or chilled.
Kitchen note
Because rice milk is so heat-stable, this quinoa can simmer covered without any need to watch for curdling, check only that the liquid has fully absorbed, not the milk's texture.
