By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Rice Milk Edition
Ingredients
- 2 cups Rolled Oats
- 2 tsp Baking Powder
- 1 tsp Cinnamon
- 1/2 tsp Salt
- 2 ripe Bananas, mashed
- 1 1/2 cups Rice Milk
- 1/3 cup Maple Syrup
- 1 large Egg
- 1/2 cup Chopped Walnuts
Method
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Whisk the oats, baking powder, cinnamon, and salt together in a large bowl.
- In a separate bowl, whisk the mashed banana, rice milk, maple syrup, and egg until combined.
- Fold the wet ingredients into the dry along with the walnuts.
- Pour into the prepared dish and bake 30 to 35 minutes, until set and golden on top.
Kitchen note
The top of this casserole browns beautifully on its own thanks to rice milk's natural sugars, no need for an egg wash or extra sugar sprinkle to get that golden finish.
