By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Rice Milk Edition
Ingredients
- 1 cup Rolled Oats
- 2 cups Rice Milk
- 1 cup Water
- 1 Apple, diced
- 1 tsp Cinnamon
- 2 tbsp Brown Sugar
- Pinch of Salt
Method
- Combine the oats, rice milk, water, diced apple, cinnamon, brown sugar, and salt in a saucepan.
- Bring to a gentle simmer over medium heat, stirring occasionally.
- Reduce heat to low and cook 8 to 10 minutes, stirring more frequently as it thickens, until the oats are creamy and the apples are tender.
- Adjust sweetness to taste.
- Serve warm.
Kitchen note
Because rice milk is heat-stable and won't curdle, you can simmer this as long as needed to fully soften the apples without any risk to the milk, let it go a few extra minutes if the apple pieces need it.
