Vegan Buttermilk
Oat milk curdled with apple cider vinegar for baking stability, standing in for traditional buttermilk in any recipe that needs that acidic tang.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Oat Milk Edition
Ingredients
- 1 cup Oat Milk
- 1 tbsp Apple Cider Vinegar
Method
- Combine the oat milk and apple cider vinegar in a small bowl or measuring cup.
- Stir once to combine.
- Let sit undisturbed for 5 to 10 minutes until visibly thickened and slightly curdled.
- Stir gently before using in place of buttermilk in any recipe.
- Use immediately for best texture; it doesn't keep well once curdled.
Kitchen note
Oat milk curdles more subtly than dairy milk does with vinegar, so don't expect dramatic clumping. The slight thickening and tang are enough to do the job in baked goods.
