Salted Caramel Oat Milk Popsicles
Frozen dessert pops layered with homemade oat caramel, taking advantage of oat milk's natural talent for deep caramelization.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Oat Milk Edition
Ingredients
- 1.5 cups Oat Milk
- 1/2 cup Brown Sugar
- 2 tbsp Vegan Butter
- Pinch of Flaky Salt
Method
- Combine the oat milk and brown sugar in a saucepan and bring to a gentle simmer, stirring to dissolve.
- Continue simmering for 12 to 15 minutes, stirring occasionally, until thickened into a loose caramel.
- Remove from heat and whisk in the vegan butter and a pinch of flaky salt.
- Cool the mixture until just warm, then pour into popsicle molds.
- Insert sticks and freeze for a minimum of 6 hours, or until completely solid.
Kitchen note
Let the caramel cool to just warm, not hot, before pouring into molds. Pouring it in too hot can warp plastic popsicle molds and makes the pops freeze unevenly.
