Oat Milk White Chocolate Ganache
Heated oat milk poured over vegan white chocolate chunks makes a glossy, pourable ganache with real body, useful anywhere a dairy-based white chocolate ganache would go.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Oat Milk Edition
Ingredients
- 3/4 cup Oat Milk
- 8 oz Vegan White Chocolate, finely chopped
- 1/2 tsp Vanilla Extract
Method
- Warm the oat milk in a small saucepan until just steaming, not boiling.
- Pour the hot oat milk over the chopped white chocolate in a heatproof bowl.
- Let sit undisturbed for 2 minutes to let the chocolate soften.
- Whisk gently from the center outward until completely smooth and glossy.
- Stir in the vanilla and use warm as a glaze, or chill for a firmer filling.
Kitchen note
Let the hot oat milk sit on the chocolate for the full two minutes before whisking. Whisking too early, before the chocolate has softened, is the most common reason this ganache turns grainy.
