Classic Vegan Rice Pudding
Arborio rice simmered long and slow in sweetened oat milk, which naturally caramelizes slightly at the pot's edges for extra depth of flavor.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Oat Milk Edition
Ingredients
- 3 cups Oat Milk
- 1/2 cup Arborio Rice
- 1/3 cup Granulated Sugar
- 1/2 tsp Ground Cinnamon
- 1/2 tsp Vanilla Extract
Method
- Combine the oat milk, rice, sugar, and cinnamon in a saucepan.
- Bring to a gentle simmer, then reduce heat to low.
- Cook, stirring frequently, for 30 to 35 minutes until the rice is tender and the mixture has thickened.
- Remove from heat and stir in the vanilla extract.
- Serve warm, or chill for a firmer, custard-like texture.
Kitchen note
Stir more frequently in the last 10 minutes. Oat milk's natural sugars caramelize slightly against the hot pan bottom, which adds flavor but can also catch and burn if left unstirred too long.
