Savory Herb Scrambled Eggs
A splash of hemp milk whisked into eggs before pan-scrambling with chives, for a velvety, herb-forward scramble.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Hemp Milk Edition
Ingredients
- 4 large Eggs
- 2 tbsp Unsweetened Hemp Milk
- 1 tbsp Fresh Chives, chopped
- Salt and Pepper, to taste
- 1 tbsp Butter
Method
- Whisk the eggs, hemp milk, chives, salt, and pepper together until fully combined.
- Melt the butter in a nonstick skillet over low heat.
- Pour in the egg mixture and let sit undisturbed 20 seconds, then begin gently pushing the eggs from the edges toward the center.
- Continue folding gently over low heat until soft curds form but the eggs are still glossy, about 3 to 4 minutes total.
- Remove from heat while slightly underdone and serve immediately.
Kitchen note
Hemp milk's stable fat structure means it won't break or weep in the pan the way a thinner milk can — it folds into the eggs cleanly even over sustained low heat.
