Rich morning muffins where the hemp milk creates an extra-soft, moist crumb structure that holds up for days.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Hemp Milk Edition
Ingredients
- 2 cups All-Purpose Flour
- 3/4 cup Sugar
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup Unsweetened Hemp Milk
- 2 large Eggs
- 1/2 cup Melted Butter
- 1 cup Dark Chocolate Chips
Method
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- Whisk the flour, sugar, baking powder, and salt together.
- In a separate bowl, whisk the hemp milk, eggs, and melted butter.
- Fold the wet ingredients into the dry just until combined, then fold in the chocolate chips.
- Divide among the muffin cups and bake 20 to 22 minutes, until a toothpick comes out clean.
Kitchen note
Dark chocolate is exactly the kind of bold flavor that pairs well with hemp milk's earthy undertone — this is a good muffin to let that flavor come through rather than trying to mask it with vanilla.
