Cashew Milk Berry Parfait
Thick cashew cream layered with fresh berries and granola for an elegant, no-cook morning parfait.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Cashew Milk Edition
Ingredients
- 1 cup Thick Cashew Cream (see Dairy Staples chapter)
- 2 tbsp Honey
- 1/2 tsp Vanilla Extract
- 1 cup Mixed Fresh Berries
- 1/2 cup Granola
Method
- Whisk the cashew cream, honey, and vanilla together until smooth.
- Layer the sweetened cashew cream, berries, and granola in glasses, alternating layers.
- Repeat until the glasses are full.
- Chill briefly if desired.
- Serve immediately for the crispest granola texture.
Kitchen note
This recipe depends on the thick, less-diluted cashew cream from the Dairy Staples chapter, not the thinner drinking milk. Using the wrong ratio here is the difference between a proper parfait and a soupy one.
