Ingredients
- 1 cup steel-cut oats
- 2 cups camel milk
- 1 1/2 cups water, plus more as needed
- 1 tsp ground turmeric
- 1 tsp finely grated fresh ginger
- Pinch freshly ground black pepper
- 1/4 tsp fine salt
- Raw honey, to serve
Method
- Combine oats, camel milk, water, turmeric, ginger, pepper and salt in a heavy saucepan; stir before heating.
- Bring just to a gentle simmer over medium heat, stirring and scraping the bottom. Do not hard-boil.
- Reduce to low and cook uncovered 20 to 25 minutes, stirring more often as it thickens.
- Taste several grains. They should be tender-chewy with no hard center. If thick before tender, add hot water 1/4 cup at a time.
- Remove when slightly looser than your ideal bowl; the oats continue thickening as they stand.
- Rest 3 to 5 minutes, then serve with raw honey and optional toasted nuts or fruit.

Cook With Confidence
Use the sensory cues in the method rather than treating the clock as the only measure of doneness.
Ingredient Intelligence
Camel milk is handled gently throughout these recipes; avoid unnecessary hard boiling and make liquid adjustments in small increments.
Make-Ahead & Storage
Refrigerate promptly in covered containers. Keep crisp toppings and fresh fruit separate until service so texture survives.
Serving Strategy
Balance creamy bases with something fresh, crisp, tart, toasted, or aromatic rather than simply adding more sweetness or richness.
Kitchen note
The black pepper meaningfully boosts turmeric's absorption, don't skip it even though it seems like a small amount.
