Creamy Spinach Cauliflower Mash
Steamed cauliflower mashed with garlic, olive oil, and hot almond milk for a lighter alternative to mashed potatoes.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Almond Milk Edition
Ingredients
- 1 large head Cauliflower, cut into florets
- 2 cloves Garlic
- 3 tbsp Olive Oil
- 1/2 cup Unsweetened Almond Milk, warmed
- 2 cups Baby Spinach, wilted and chopped
- Salt and Pepper, to taste
Method
- Steam the cauliflower and garlic together until very tender, about 12 minutes.
- Drain thoroughly and let sit 2 minutes to release excess steam.
- Mash or blend the cauliflower and garlic with olive oil until mostly smooth.
- Stir in the warmed almond milk gradually until you reach your desired consistency.
- Fold in the wilted spinach, season with salt and pepper, and serve warm.
Kitchen note
Draining the cauliflower thoroughly before mashing matters more here than with potatoes — almond milk brings no thickening power, so any extra water left in the vegetable will turn this soupy fast.
