Before you start
Before you start
Ground turkey varies in fat content. A mix containing thigh meat stays juicier than very lean breast. The measured panade helps hold moisture but cannot compensate for overbaking.
Serving and keeping
Refrigerate within 2 hours for 3 to 4 days. Reheat to 165°F in sauce or a covered oven dish.
Mix Less Than You Think
Combine turkey, soaked crumbs, egg, garlic, and 1/4 cup Parmesan only until evenly distributed. Kneading the mixture compacts proteins and produces springy, dense meatballs.
Shape Without Packing
Use damp or lightly oiled hands and roll gently. Equal size matters more than perfect spheres because even meatballs reach safe temperature together.
