Ingredients
- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 28 oz crushed tomatoes
- 2 cups low-sodium vegetable stock
- 1 tsp sugar, optional after tasting
- 1 cup pasteurized camel milk
- 1/2 tsp fine salt, plus more to taste
- 1/4 tsp black pepper
- 1/4 cup fresh basil leaves
Method
- Heat oil in a 3-quart saucepan over medium heat. Cook onion with salt 7 minutes until soft; stir in garlic for 30 seconds.
- Add tomatoes, stock and sugar. Simmer uncovered 20 minutes, stirring occasionally.
- Remove from heat. Purée with an immersion blender, keeping its head submerged. For a countertop blender, cool slightly and work in small vented batches.
- Return soup to the pan and slowly stir in milk off direct heat. Warm on low until evenly hot, without a rolling boil.
- Taste for salt, add pepper and finish with torn basil. Serve with toast.
Cook with confidence
Before you start
Before you start
Do not seal steaming soup in a blender. Reduce the tomato base before adding dairy; vigorous boiling after milk addition increases the chance of separation.
Serving and keeping
Cool in shallow containers within 2 hours. Refrigerate 3 to 4 days; reheat to 165°F while stirring. Add a splash of stock if thickened.
Know When the Base Is Ready
Before camel milk enters, onion should disappear into the base and the soup should coat a spoon. If watery after 20 minutes, reduce another 5 minutes before blending.
Troubleshoot the Pot
- Too acidic: add a small additional pinch of sugar, not more milk.
- Too thin: reduce before adding camel milk.
- Slightly grainy: remove from heat and immersion-blend briefly.
- Too thick after chilling: reheat with stock 2 tablespoons at a time.
