By Aunesty Janssen · The Complete Camel Milk Guide & Cookbook: A Definitive Guide to History, Science, Sourcing & 150 Original Recipes
Ingredients
- 3 cups pasteurized camel milk
- 1 cup water, plus more hot water as needed
- 1 tsp fine salt
- 1 cup coarse polenta cornmeal
- 2 tbsp butter, divided
- 1 tbsp olive oil
- 1 lb cultivated edible mushrooms, sliced
- 2 garlic cloves, minced
- 1 tsp chopped thyme
- 1/4 tsp black pepper
Method
- Bring milk, water and salt to a gentle simmer in a heavy saucepan. Whisk in polenta in a thin stream.
- Reduce heat to low and cook 30 to 45 minutes, stirring frequently and scraping the bottom, until grains are tender. Add hot water by the tablespoon if it stiffens before softening.
- Meanwhile clean and slice cultivated mushrooms. Heat oil and half the butter in a wide skillet. Brown mushrooms in batches 8 to 12 minutes.
- Add garlic for the final minute and stir in thyme.
- Take polenta off heat and stir in remaining butter. Taste both components for seasoning.
- Spoon polenta into bowls and top with mushrooms; serve while flowing.

Before you start
Before you start
Use cultivated or professionally identified edible mushrooms, never unidentified foraged mushrooms. Coarse cornmeal varies in cooking time; package guidance and grain tenderness govern the finish.
Serving and keeping
Refrigerate within 2 hours for up to 3 days. Reheat to 165°F, stirring in water to restore a spoonable texture.
Stream the Polenta
Pour cornmeal slowly into gently simmering liquid while whisking. Once incorporated, lower heat and stir frequently, scraping corners.
Garlic Enters After Mushroom Browning
Use the listed oil and half the butter for mushrooms, working in batches if needed. Add garlic near the end so it does not burn while mushroom water evaporates. The remaining butter finishes polenta off heat; it should not all disappear into the skillet.
