Ingredients
- 2 cups very cold camel milk
- 1/3 cup pure pistachio butter or paste
- 1 to 2 tbsp honey, to taste
- 1 cup ice
- 2 tbsp toasted pistachios, crushed
- Pinch fine salt, optional
Method
- Add camel milk to the blender first, followed by pistachio butter, 1 tablespoon honey and salt if using.
- Blend until the pistachio is fully emulsified and no streaks remain. Taste before adding more honey, especially if using sweetened pistachio cream rather than pure butter.
- Add the ice and blend just until thick, frosty and moving smoothly through the blades.
- If the blender cavitates, stop and stir rather than immediately adding a large amount of milk.
- Pour into chilled glasses.
- Finish with toasted crushed pistachios and serve immediately.

Know Your Pistachio Product
Pure pistachio butter is unsweetened; pistachio cream may already contain sugar and oil.
Ice Is the Texture Lever
Stop blending as soon as smooth because continued blending melts the ice and thins the shake.
Make-Ahead Base
Blend milk, pistachio and honey without ice, refrigerate, then finish each serving with ice.
Flavor Direction
Saffron, cardamom, rosewater or orange blossom can work, but choose one dominant aromatic rather than all at once.
Kitchen note
If your pistachio paste is very oily, blend it with a small splash of the camel milk first to loosen it before adding the rest, this prevents an oily separation at the top of the shake.
