Ingredients
- 2 cups (240 g) all-purpose flour, plus a little for rolling
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp fine salt
- 1/3 cup pasteurized camel milk, plus up to 3 tbsp as needed
- 1/3 cup plain pasteurized yogurt
- 2 tbsp melted unsalted butter
- 1 tbsp melted butter, for brushing
Method
- Whisk flour, baking powder, baking soda and salt. Stir in milk, yogurt and butter. Add 1 to 3 tablespoons extra milk only if dry flour remains.
- Knead on a lightly floured surface 2 to 3 minutes until cohesive and soft, not stiff. Cover and rest 30 minutes.
- Divide into six equal pieces; roll each into an oval about 1/8 inch thick.
- Heat a heavy dry skillet over medium-high heat. Cook one bread at a time 1 to 2 minutes until bubbles appear and the underside has brown spots.
- Flip and cook another 1 to 2 minutes until cooked through. Reduce heat if it blackens too quickly.
- Brush with melted butter and keep wrapped in a clean towel while cooking the rest.

Before you start
Before you start
This is a quick yogurt flatbread, not a yeast-risen naan. Yogurt acidity activates the soda. Milk quantity may vary with yogurt thickness and flour absorption; add extra sparingly.
Serving and keeping
Serve warm. Cool completely before bagging; refrigerate up to 3 days or freeze. Reheat rather than refrigerating warm breads in a tightly sealed stack.
Why the 30-Minute Rest Matters
The rest hydrates flour and relaxes gluten so six portions roll without springing back. If a piece keeps shrinking, cover and rest another 10 minutes instead of forcing it thinner.
Skillet Heat Test
- Use a dry skillet over medium-high heat.
- A water drop should evaporate almost immediately.
- Bubbles should appear within the first minute.
- If browning happens before bubbles, lower heat; if no color after 2 minutes, raise it.
