Ingredients
- 1 cup camel-milk labneh, well chilled
- 2 thick slices sturdy sourdough or country bread
- 1 to 2 tbsp extra-virgin olive oil
- 1 tsp za’atar, plus more to taste
- Flaky salt
- Sliced cucumber or tomato, optional
Method
- Toast the bread until deeply golden and crisp enough to support the labneh without softening immediately.
- Let the toast stand 30 seconds so extreme surface heat does not melt the labneh.
- Spread about 1/2 cup cold labneh generously over each slice, creating shallow swirls with the spoon.
- Drizzle with olive oil, allowing some to collect in the labneh ridges.
- Sprinkle with za’atar and a restrained amount of flaky salt.
- Serve immediately. If using cucumber or tomato, drain wet slices briefly before adding.

Before you start
The Bread Matters
Use a sturdy slice and toast it darker than ordinary breakfast toast so it can support a thick dairy spread.
Wet Toppings
Drain tomato or cucumber briefly before adding so the toast stays crisp.
Variations
Try cucumber and mint, roasted tomato and sumac, or fig and pistachio.
Best Timing
Assemble only when ready to eat; labneh and vegetables eventually soften the bread.
Kitchen note
The longer camel milk yogurt strains, the closer it gets to a spreadable cream cheese texture, aim for at least 12 hours of straining for a toast-ready thickness.
