By Aunesty Janssen · The Complete Camel Milk Guide & Cookbook: A Definitive Guide to History, Science, Sourcing & 150 Original Recipes
Ingredients
- 3 1/2 cups (420 g) bread flour
- 2 1/4 tsp (7 g) active dry yeast
- 1 tsp sugar
- 1 1/2 cups pasteurized camel milk, warm to 100 to 110°F
- 1/3 cup olive oil, divided
- 1 1/2 tsp fine salt
- 1 tsp flaky salt
- 1 tbsp rosemary leaves
Method
- Stir yeast and sugar into warm milk; rest 5 to 10 minutes until foamy. Mix with flour, fine salt and half the oil into a sticky soft dough.
- Knead in a mixer 6 to 8 minutes or use wet hands to stretch and fold in the bowl every 10 minutes for three rounds.
- Cover and rise 60 to 90 minutes until doubled. Oil a 9-by-13-inch metal pan with 1 tablespoon reserved oil.
- Transfer dough, gently stretch toward the corners and rest 15 minutes if it resists. Cover and proof 45 to 60 minutes until puffy.
- Heat oven to 425°F. Drizzle remaining oil, dimple with oiled fingers and add rosemary and flaky salt.
- Bake 20 to 30 minutes until golden above and below. Cool on a rack 15 minutes before cutting.

Before you start
Before you start
The milk quantity provides a soft focaccia dough. A defined pan size prevents a thin dry sheet or a thick underbaked center. Keep the dough sticky rather than adding flour until easy to handle.
Serving and keeping
Keep cooled plain focaccia airtight for 2 days or freeze for 2 months. Refrigerate versions topped with perishable ingredients.
Oil Creates the Crust
Half the 1/3 cup olive oil enters the dough; the remainder oils the pan and dimples. Those oil pools create focaccia's fried-crisp surface.
Two Rises
Give the dough about 1.5 hours to double, then 30 minutes after pressing into the pan. Dimple only after the dough has relaxed.
