Ingredients
- 2 generous scoops camel-milk gelato
- 2 short shots freshly pulled espresso
- 1 tbsp dark chocolate shavings
- 1 tbsp toasted pistachios, optional
- Orange zest, optional
Method
- Chill two small glasses or dessert bowls while the espresso equipment heats.
- Place one firm scoop of camel-milk gelato in each chilled vessel. Add any dry garnish now except chocolate if you want it unmelted.
- Pull two short espresso shots only after the gelato is plated.
- Immediately pour one shot over one side of each scoop, leaving part of the gelato frozen.
- Finish with dark chocolate shavings and optional pistachio or orange zest.
- Serve at once; affogato has no holding window.

Before you start
Timing Is the Recipe
Plate gelato before pulling espresso. The contrast disappears within minutes.
Short Shots
Long espresso shots add hot water and melt the gelato faster while often tasting more bitter.
Gelato Choice
Vanilla emphasizes coffee, pistachio adds nuttiness and chocolate makes a darker dessert.
Service
Chilled vessels buy a little extra frozen time and improve presentation.
Kitchen note
This is entirely about contrast and timing, pour the espresso tableside for the best effect, since the gelato begins melting the moment the hot liquid touches it.
