Ingredients
- 2 cups camel milk
- 2 tbsp packed light or dark brown sugar
- 1/2 tsp ground cinnamon
- Pinch fine salt
- 1/4 tsp vanilla extract
- Fresh nutmeg, optional
Method
- Combine camel milk, brown sugar, cinnamon and salt in a saucepan.
- Warm over medium-low heat, whisking frequently so the sugar dissolves and cinnamon stays suspended.
- When steaming and fully dissolved, reduce heat and hold for 1 minute without boiling.
- Remove from heat and stir in vanilla.
- Whisk vigorously or froth until a light foam forms.
- Pour immediately into warm mugs, whisking once more just before pouring because cinnamon naturally settles; finish with nutmeg if desired.

Before you start
Cinnamon Settles
Ground cinnamon suspends rather than dissolves, so whisk just before pouring.
Brown Sugar
Molasses notes create the cinnamon-toast character better than plain white sugar.
Foam Last
Dissolve sugar and warm the milk before frothing.
Batching
Hold briefly in an insulated carafe, not on a burner, and whisk before serving.
Kitchen note
Brown sugar's molasses notes pair especially well with camel milk's subtle salinity, a good introductory sweet drink for anyone tasting camel milk for the first time.
