Ingredients
- 1 1/2 cups (180 g) all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp fine salt
- 1/2 tsp ground cardamom
- 1 1/2 cups pasteurized camel milk
- 1 large egg
- 3 tbsp unsalted butter, melted and cooled
- 1 tsp butter or neutral oil for the griddle
Method
- Whisk flour, sugar, baking powder, salt and cardamom in a large bowl.
- Whisk milk and egg separately, then whisk in butter cooled to lukewarm. Fold into dry ingredients just until no dry pockets remain. Rest 10 minutes.
- Heat a griddle over medium heat, about 350°F if thermostatically controlled, and grease lightly.
- Scoop 1/4 cup batter per pancake, leaving space to flip. Cook 2 to 3 minutes until edges look matte and bubbles remain open.
- Flip once; cook 1 to 2 minutes until golden and cooked in the center. Adjust heat if surfaces brown before the middle sets.
- Keep batches on a rack in a 200°F oven for up to 20 minutes. Serve warm.

Before you start
This version uses baking powder rather than baking soda because fresh milk does not supply enough acid for soda alone. Measure flour by weight or spoon it into the cup and level it; packed flour makes stiff batter.
Serving and keeping
Cool on a rack and refrigerate within 2 hours for up to 3 days. Reheat until hot throughout. Raw batter contains egg and flour; do not taste it.
Read the Batter
With 1 1/2 cups flour to 1 1/2 cups camel milk, batter should fall in a thick ribbon and retain small lumps. If it pours like cream, add flour 1 tablespoon at a time. If it drops in clumps, add camel milk 1 tablespoon at a time.
Griddle Control
- Use medium heat. A 1/4-cup pancake needs about 2 to 3 minutes before flipping.
- Flip when bubbles remain open and the rim looks matte.
- If the first side darkens before bubbles set, lower heat.
- Cook the second side only 1 to 2 minutes and never press the pancake.
