Ingredients
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 1 cup pasteurized camel milk
- 4 tbsp butter
- 1 tsp vanilla extract
- 1/8 tsp fine salt
Method
- Line an 8-inch square pan with parchment. Combine sugars, milk, butter and salt in a deep heavy saucepan.
- Heat over medium-low, stirring until sugars dissolve. Wash visible sugar crystals down with a wet pastry brush.
- Attach a candy thermometer. Cook at a gentle boil to 236°F, stirring only as needed to prevent scorching and avoiding scraping crystallized sides.
- Remove from heat. Add vanilla without beating. Let cool undisturbed to about 110°F.
- Beat with a wooden spoon until thick, less glossy and beginning to hold soft ridges, about 3 to 6 minutes.
- Immediately spread in the prepared pan. Let set about 3 hours before cutting.

Before you start
Before you start
This is a brown-sugar caramel-flavored fudge, not a caramel sauce. Cooling before beating creates finer crystals. Candy temperatures assume sea level and need altitude adjustment.
Serving and keeping
Refrigerate airtight within 2 hours after setting if kept longer than the same day; use within 1 week. Bring individual pieces briefly to room temperature for serving.
Beating Creates the Texture
The controlled crystallization during beating turns syrup into fudge. Pouring immediately without beating leaves a different caramel texture.
Troubleshoot
- Too soft: temperature too low.
- Crumbly: cooked too hot or beaten too long.
- Grainy: uncontrolled crystallization.
- Won't set: thermometer inaccurate.
