Ingredients
- 1 cup buckwheat flour
- 2 large eggs
- 1 1/2 cups camel milk
- 2 tbsp melted butter, cooled slightly
- 1/4 tsp fine salt
- Butter, for the pan
Method
- Whisk buckwheat flour and salt. Separately whisk eggs and camel milk.
- Gradually whisk wet into flour until smooth, then whisk in melted butter.
- Cover and rest 30 minutes. Whisk again; if thick, add camel milk 1 tablespoon at a time.
- Heat an 8- to 10-inch skillet over medium and brush lightly with butter. Add about 1/4 cup batter and immediately tilt to spread thinly.
- Cook 60 to 90 seconds until the surface loses its wet sheen and edges lift; flip and cook 20 to 40 seconds.
- Stack finished crepes and keep covered so they remain pliable.

Use the sensory cues in the method rather than treating the clock as the only measure of doneness.
Ingredient Intelligence
Camel milk is handled gently throughout these recipes; avoid unnecessary hard boiling and make liquid adjustments in small increments.
Make-Ahead & Storage
Refrigerate promptly in covered containers. Keep crisp toppings and fresh fruit separate until service so texture survives.
Serving Strategy
Balance creamy bases with something fresh, crisp, tart, toasted, or aromatic rather than simply adding more sweetness or richness.
Kitchen note
Camel milk's thinner body compared to whole cow's milk actually helps here, it produces a more delicate, lace-edged crepe rather than a thick pancake-like one.
