Almond Milk Sweet Condensed Milk
Reduced slowly with sugar until sticky and caramelized, standing in for dairy condensed milk in any dessert application.
By Aunesty Janssen · The Arrogant Hippie Culinary Journal: Almond Milk Edition
Ingredients
- 4 cups Unsweetened Almond Milk
- 1 cup Sugar
- 1/2 tsp Vanilla Extract
- Pinch of Salt
Method
- Combine the almond milk and sugar in a wide, heavy saucepan over medium heat, stirring until the sugar dissolves.
- Bring to a gentle simmer, then reduce heat to low.
- Simmer uncovered for 45 to 60 minutes, stirring occasionally at first and more frequently toward the end, until reduced to about 1 1/4 cups and syrupy.
- Stir in the vanilla and salt.
- Cool completely — it will thicken further as it cools — then bottle and refrigerate.
Kitchen note
Stir more often in the final 15 minutes of reduction — almond milk's low fat content means the sugars at the bottom of the pot can scorch faster here than they would in a dairy-based condensed milk.
